Dairy-Free Kesar Kulfi

Dairy-Free Kesar Kulfi is a simple homemade recipe prepared with Thick coconut milk. Soak dates overnight in just enough water/in the second extract of coconut milk. Thick coconut milk: ½ cup(first extract of about half a coconut)

Nut powder: 3 tbsp (almond, pista, cashew mixed and blended into a powder)

Dates: 6-8 nos(seeded)

Cardamom powder: ¼ tsp

Saffron: Few strands

  1. Soak dates overnight in just enough water/in the second extract of coconut milk.
  2. Powder mixed nuts. Don’t worry about getting a very fine powder.
  3. Make a paste of the soaked dates without the liquid. Add thick coconut milk if you need.
  4. Add nut powder and cardamom powder.
  5. Mix in the saffron strands.
  6. Freeze for two hours. Whip together.
  7. Freeze for two hours and whip again. This helps prevent ice formation.
  8. Scoop or cut and serve garnished with crushed nuts and saffron.
